Peel and wash the potatoes. Clean and wash the carrots and leeks. Peel onions. Cut everything into slices. Dice meat. Line the bottom of a large ovenproof pot with half the potatoes.
Cover with water. Layer prepared ingredients and remaining potatoes on top. Season with salt, pepper and thyme. Braise in the preheated oven (electric cooker: 175 °C/ gas: level 2) for three hours.
Sprinkle with pepper.
