Indian rice with peanuts

Ingredients

  • 2 TABLESPOONS Peanuts
  • 2 tablespoons (30 g) Butter or margarine
  • 200 g Long grain rice
  • 1 (40 g) Bag "Fix for Curry Dishes"
  • 2 Eggs
  • 7-10 Tbsp Parsley

Directions

    Grate the salt from the nuts. Fry the nuts in 1 tablespoon of fat. Add rice, spice mixture and 400 ml water, bring to the boil. Cover and allow to swell for 15-20 minutes. Fry the eggs in the remaining fat.

    Arrange on the rice and sprinkle the nuts on top. Garnish with parsley. Serve immediately.
