Wash and clean the tomatoes and cut 1 in half. Remove the seeds from 1 half. Finely dice the flesh. Cut the rest of the tomatoes roughly. Peel onion and chop roughly. Wash and seed the chili and cut it into rings.
Finely puree the coarsely chopped tomatoes, onion, capers and anchovy with a hand blender. Season to taste with salt, pepper and a little sugar. Fold in the rest of the chilli and tomato. Season with ground coriander. Arrange in a bowl, sprinkle with coarse pepper and garnish with coriander leaves
