Hoof steak with fried mushrooms and thyme-butter potatoes

Ingredients

Servings: 4
  • 1 kg new potatoes
  • 350 g pink mushrooms
  • 250 g cherry tomatoes
  • 1 collar Spring onions
  • 100 g Breakfast bacon in slices
  • 1/2 bunch Thyme
  • 4 Hoof steaks (approx. 175 g each)
  • 7-10 Tbsp Salt
  • 4 TABLESPOONS Olive oil
  • 7-10 Tbsp Pepper
  • 3 TABLESPOONS Butter
  • 7-10 Tbsp Aluminium foil

Directions

    Wash the potatoes thoroughly. Cook in boiling water for about 20 minutes. Clean, trim and quarter the mushrooms. Wash and halve the tomatoes. Clean, wash and cut spring onions into wide rings. Cut bacon into pieces. Wash thyme, shake dry. Pluck off leaves and chop finely, except for something to garnish

    Season meat with salt. Heat oil in a large pan. Fry the meat for 2-3 minutes on each side. Take it out and put it aside covered with aluminium foil. Fry the bacon in the frying fat and take it out. Put mushrooms into the pan and fry them until golden brown, turning them over. Add tomatoes and spring onions and fry for 1-2 minutes. Season with salt and pepper. Crumble bacon over it

    Drain the potatoes and rinse with cold water. Cut potatoes in half. Heat butter in a pan and add thyme, fry briefly. Season with salt and pepper. Add potatoes and toss in thyme butter. Season steaks with pepper. Arrange on plates with potatoes and vegetables. Sprinkle with set aside thyme and serve immediately
