Homemade oven fries with Aioli light

Ingredients

  • 750 g large waxy potatoes
  • 7-10 Tbsp Salt
  • 1 TEASPOON Sweet peppers
  • 1 TABLESPOON Oil
  • baking paper
  • 50 ml low-fat milk (1,5 %)
  • 2 TEASPOONS medium hot mustard
  • 1 TEASPOON Lemon juice
  • 100 ml Oil (e.g. rape seed oil)
  • 7-10 Tbsp salt, pepper
  • 7-10 Tbsp coarse sea salt

Directions

    For the fries, wash and peel the potatoes and cut them into approx. 1.5 cm thick sticks. Spread them on a baking tray lined with baking paper. Sprinkle with 1 tsp. salt and paprika. Sprinkle with oil (approx. 1 tbsp.) (see

    left) or sprinkle with water and mix once on the tray. Bake in the preheated oven (electric oven: 200 °C/circulating air: 175 °C/gas: see manufacturer) for approx. 30 minutes. Turn over after approx. 10 minutes.

    For the aioli, pour milk, mustard and lemon juice into a tall mixing bowl. Mix with a hand blender, slowly adding 100 ml of oil in a thin stream until you have a white-creamy mayonnaise.

    Season to taste with salt and pepper. Sprinkle the fries with sea salt and add the aioli.
