Wash and clean the salad and drain thoroughly. Wash, clean and quarter radishes. Cucumber wash, clean and cut into slices. Season vinegar with salt, pepper and sugar, fold in 3 tablespoons of oil.
Wash the meat and dab dry. Heat 1 tablespoon of oil in a pan. Season meat with salt and pepper and fry in 2 portions for about 1 minute on each side. In the meantime, wash parsley and pat dry.
Pluck parsley leaves from the stalks and cut into strips, except for 4 leaves. Remove the meat. Wash lemon hot, grate dry and grate peel. Halve lemon and squeeze.
Melt butter in a clean pan, add parsley strips, lemon juice and zest. Arrange salad with radishes and cucumber, drizzle with vinaigrette. Serve the meat as well, sprinkle with parsley butter and garnish with parsley leaves.
Baguette tastes good with it.
