Wash, peel and quarter the apples, cut out the core. Cut the fruit flesh into pieces. Put them in a pot with lemon juice, sugar and 250 ml water and bring to the boil. Cover and cook over low to medium heat for about 20 minutes, stirring occasionally.
Immediately pour the compote into about 5 boiling hot rinsed twist-off glasses, close them and turn them upside down for about 1 minute. Turn the glasses upside down again and let the compote cool down.
