Peel, wash and quarter the potatoes. Cook in boiling salted water for about 20 minutes. In the meantime peel and quarter apples and cut out the core. Cut the fruit flesh into pieces. Steam covered with lemon juice, sugar and 75 ml water for about 10 minutes. Peel onions, cut into rings. Finely dice bacon.
Cut sausage into thick slices. Leave the bacon out until crispy. Fry onions and sausage slices one after the other in bacon fat, if necessary add 1 tablespoon of oil. Drain potato water. Add milk and butter to the potatoes and mash. Season with nutmeg. Serve in portions garnished with thyme and halved, steamed mini apples
