Hearty red cabbage with pear and bacon

Ingredients

  • 1 Head Red cabbage (about 1 kg)
  • 2 Onions
  • 2 TABLESPOONS clarified butter
  • 50 ml Raspberry vinegar
  • 100 ml Red wine
  • 100 ml apple juice
  • 1 Bay leaf
  • 2 Juniper berries
  • 2 Cloves
  • 1 Cinnamon stick
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 2 (approx. 250 g) Pears
  • 200 g streaky smoked bacon in one piece
  • 2 TABLESPOONS gelled cranberries

Directions

    Clean, wash and quarter the cabbage. Cut out the stalk and cut the cabbage into strips. Onions peel, halve and cut into strips. Heat lard in a large, wide pot. Steam the onions for about 5 minutes.

    Add red cabbage, pour on vinegar, wine and apple juice, bring to the boil. Season with laurel, juniper, cloves, cinnamon, salt, pepper and sugar.

    Wash, clean and halve the pears and remove the core. Dice 1 pear and add to the red cabbage with the pear halves. Stew red cabbage covered for about 1 hour. Cut bacon into very thin slices of about 3 cm width.

    Add to the red cabbage about 30 minutes before the end of the cooking time and cook until done. Season red cabbage to taste, arrange in a bowl and add cranberries.
