Green asparagus gratin

  • 500 g green asparagus
  • 7-10 Tbsp Salt
  • 2 (approx. 400 g) Courgettes
  • 1 collar Spring onions
  • 7-10 Tbsp (ca. 125 g)
  • 5 Eggs
  • 60 g French cream cheese

    Wash and drain the asparagus, peel the lower third and cut off the ends. Cut the asparagus into 4-5 cm long pieces. Pre-cook in boiling salted water for 5-10 minutes, depending on thickness. In the meantime clean and wash the zucchini and cut them diagonally into thin slices. Lift the asparagus out of the water with a skimmer. Add the zucchini and blanch for 1-2 minutes. Pour onto a sieve and drain. Clean and wash spring onions and cut into rings. Mix the vegetables and put them into a greased cake tin or a flat casserole dish. Mix eggs and cheese, then stir in the milk, salt, pepper and nutmeg. Pour egg milk over the asparagus. Let it set in the preheated oven (electric cooker: 200 °C/ gas: level 3) for 50-60 minutes. Let rest for about 10 minutes before cutting. Cut into cake pieces and serve
