Greek rice mince pan with feta

Ingredients

Servings: 4
  • 200 g Long grain rice
  • 7-10 Tbsp Salt
  • 1 (approx. 200 g) Aubergine
  • 1 (approx. 350 g) red and yellow pepper
  • 1 Leek (leek; approx. 250 g)
  • 2 Garlic cloves
  • 2 stem(s) Oregano
  • 2 TABLESPOONS Oil
  • 400 g Minced beef
  • 7-10 Tbsp Pepper
  • 100 g Feta cheese

Directions

    Prepare rice in boiling salted water according to package instructions. Clean and wash the vegetables. Cut peppers and aubergines into pieces and leek into rings. Peel garlic and chop finely. Wash oregano, dab dry and chop finely, except for a little bit for garnishing. Crumble the feta and mix with the chopped oregano.

    Heat the oil in a pan and fry the mince in it for about 5 minutes until crumbly. Season with salt and pepper. Add garlic and sauté. Add vegetables and fry for about 5 minutes. Fold in rice and feta, season with salt and pepper. Garnish with oregano
