Prepare rice in boiling salted water according to package instructions. Clean and wash the vegetables. Cut peppers and aubergines into pieces and leek into rings. Peel garlic and chop finely. Wash oregano, dab dry and chop finely, except for a little bit for garnishing. Heat oil in a frying pan.
Fry for about 5 minutes until crumbly, season with salt and pepper. Add garlic and sauté. Add vegetables and fry for about 5 minutes. Fold in rice and oregano, season with salt and pepper. Garnish with oregano
