Gooseberry cracknel cake

Ingredients

  • 1 kg red and green gooseberries
  • 750 g Flour
  • 500 g Butter or margarine
  • 300 g demerara sugar
  • 1 pinch Salt
  • 1 package Vanillin sugar
  • 1 jar (320 g) lemon curd
  • 100 g Whipped cream
  • 7-10 Tbsp Grease

Directions

    Wash, drain and clean the berries. For the crumbles, put flour, fat in flakes, sugar, salt and vanillin sugar in a large mixing bowl. Mix with the dough hooks of the hand mixer. Then work into crumbles with your hands

    Spread a good 2/3 of the crumbles on a greased baking tray (32 x 39 cm) and press down with your hands to a smooth base. Mix the gooseberries and lemon curd, up to 2 tbsp, and spread on the crumble base. Sprinkle the rest of the crumbles evenly on top

    Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for approx. 50 minutes. Remove from the oven, let it cool down and cut into pieces. For the sauce, stir cream and the rest of the lemon curd until smooth. Spread the sauce on the pieces according to taste
