Game skewers with apricot dip

Ingredients

Servings: 4
  • 1 Garlic clove
  • 2 TEASPOONS pickled green pepper (glass)
  • 2 TABLESPOONS Walnut oil
  • 2 TABLESPOONS Lemon juice
  • 800 g triggered
  • 7-10 Tbsp Leg or saddle of venison
  • 125 g Soft Apricots
  • 200 ml fresh orange juice
  • 2 TEASPOONS Honey (e.g. Manuka)
  • 1 TABLESPOON Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp wooden skewers

Directions

    Peel garlic and chop finely. Chop peppercorns. Mix both with walnut oil and lemon juice. Wash the meat and dab dry. Remove tendons and fat. Cut meat into small cubes and mix with the marinade. Cover and leave to stand in the refrigerator for at least 3 hours, preferably overnight.

    Dice the apricots and soak in the orange juice for about 30 minutes. Peel and finely chop the ginger. Puree apricots together with juice, ginger and honey. Heat everything in a pot and let it simmer for a short time. Season to taste with salt and pepper. 3. Put the meat on skewers. Heat oil in a pan. Fry meat on each side for 2-4 minutes. Season with salt. Arrange skewers with the dip on a plate. Roast potatoes taste good with it
