Bring the milk, lemon zest and vanilla pod to the boil. Sprinkle in semolina while stirring. Leave to swell for 10 minutes. Add 3 tablespoons honey. Remove the pod. Let the semolina cool down. Whip cream until stiff and fold in.
Peel kiwis. Wash and clean the strawberries, cut them into small pieces and sprinkle with the remaining honey. Arrange the fruits, except some for decoration, in glasses with semolina foam. Decorate with fruit and lemon balm.
