Fruit rice with almond brittle

Ingredients

Servings: 1
  • 4 TABLESPOONS (40 g) sugar
  • 1 tablespoon (20 g) Almond slivers
  • 2 (30 g) go. Tbsp. rice flakes
  • 1 (125 g) Cup of "Vanilla" soya dessert (e.g. Alpro soya)
  • 100 g Strawberries
  • 2-3 fresh apricots or 4-6 apricot halves
  • 7-10 Tbsp (canned food)
  • 1-2 TEASPOONS Lemon juice
  • 7-10 Tbsp grated lemon peel
  • 7-10 Tbsp aluminium foil and some oil

Directions

    Melt 2 tablespoons of sugar in a frying pan. Add almond slivers and turn in it. Place on a piece of oiled aluminium foil, allow to set and crumble

    Boil 150 ml of water. Sprinkle in rice flakes while stirring. Cook for about 1 minute. Then take the pot off the stove. Cover the flakes and let them swell for 3-5 minutes. Stir in 1 tablespoon of sugar. Let it cool down a bit. Stir in the soy dessert

    Wash and clean the strawberries and, depending on the size, halve or quarter them. Wash, halve and stone the apricots (drain the apricots from the tin). Cut the apricots into slices

    Mix lemon juice and 1 tablespoon of sugar. Mix with the fruit. Arrange rice, fruit and brittle. Decorate with lemon zest
