Prepare rice in boiling salted water according to package instructions. Clean and wash the leek and cut into thin rings. Peel and wash carrots and cut them diagonally into thin slices. Wash turkey, dab dry and cut into strips.
Drain the rice, rinse thoroughly with cold water and allow to drain. Heat the oil in a large, coated pan. Fry the meat for 3-4 minutes over high heat, turning it over, and remove it.
Fry the leek and carrots in the pan at medium heat for 3-4 minutes. Add rice and meat and continue frying for 2-3 minutes. Whisk eggs and soy sauce. Add to the pan, fry for about 2 minutes, turning, then stir in Sambal Oelek, season with salt and pepper.
