Fried potatoes with pesto

Ingredients

Servings: 4
  • 800 g waxy potatoes
  • 200 g green beans
  • 7-10 Tbsp Salt
  • 4 TABLESPOONS Olive oil
  • 1 red onion
  • 4 TSP Pesto
  • 7-10 Tbsp Pepper
  • 4 Anchovy fillets
  • 7-10 Tbsp Basil

Directions

    Wash the potatoes and cook in plenty of boiling water for about 20 minutes. Rinse under cold water, drain and peel

    Let the potatoes cool down. Clean, wash and chop the beans. Cook in boiling salted water for about 6 minutes. Rinse under cold water and drain. Cut potatoes into slices. Heat oil in a pan. Fry the potatoes for about 15 minutes while turning.

    Peel onion and cut into rings. After 5 minutes add beans and onion to the potatoes and fry them. Add pesto 3 minutes before the end. Season to taste with salt and pepper. Arrange on plates. Form anchovies into rolls and add. Garnish with basil
