Fried fish with apple-mustard sauce

Ingredients

Servings: 4
  • 750-800 g Fish fillet (e.g. redfish)
  • 2 TABLESPOONS Lemon juice
  • 1-2 medium sized apples, salt
  • 3-4 tablespoons (10 g each) butter/margarine
  • 5 tablespoons (10 g each) Flour
  • 100 g Whipped cream
  • 1 TEASPOON Vegetable broth
  • 1-2 TABLESPOONS grainy mustard
  • 7-10 Tbsp white pepper
  • 1 egg, 3-4 tablespoons breadcrumbs
  • 1/2 bunch Chives

Directions

    Wash the fish and pat dry. Cut into 4 pieces and sprinkle with some lemon juice. Wash apples. Quarter 1 apple, remove seeds and cut into sticks. Possibly cut 1 apple into slices. Steam in little boiling water with some salt for about 2 minutes. Drain

    Heat 2 tablespoons of fat. Fry 2 tbsp. flour in it. Stir in 1/4 l water, cream and stock and bring to the boil. Add apple pegs and simmer everything for about 3 minutes. Season to taste with mustard, salt and pepper

    Season 3 tablespoons of flour with salt and pepper. Whisk the egg. Turn the fish one after the other in flour, egg and breadcrumbs. Fry in 1-2 tbsp. hot fat on each side for 3-4 minutes until golden brown

    Arrange the fried fish and apple slices with the mustard sauce. Wash the chives, chop them finely and sprinkle over them. Serve with boiled potatoes
