Fried Brussels sprouts with Bolognese

Ingredients

  • 1 bunch of greens
  • 2 Onions
  • 2 TABLESPOONS Olive oil
  • 400 g mixed minced meat
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp dried basil and oregano
  • 1 TABLESPOON Tomato paste
  • 1 package (500 g) chunky tomatoes
  • 1 kg Brussels sprouts
  • 2 TABLESPOONS Butter or margarine
  • 7-10 Tbsp freshly grated nutmeg
  • 50 g grated gouda cheese

Directions

    Soup greens clean or peel, wash and cut into very small cubes. Peel and finely dice the onions

    Heat the oil in a frying pan. Fry the minced meat for about 10 minutes. After approx. 7 minutes add prepared vegetables, except for 1 onion. Season with salt, pepper, basil and oregano. Stir in tomato paste and sweat for another 3 minutes. Add tomatoes, bring to the boil and simmer for about 20 minutes

    In the meantime, clean and wash the Brussels sprouts and remove some of the outer leaves. Halve the Brussels sprouts. Cook in boiling salted water for about 10 minutes. Add the last 2 minutes of sprouts leaves. Heat the fat in a pan, fry the remaining onion cubes and cabbage for about 10 minutes. Season with salt, pepper and nutmeg. Add the sauce. Sprinkle with cheese to taste
