Flavoured semolina pudding with orange-caramel sauce

Ingredients

  • 1/2 l Milk
  • 1 package Semolina pudding
  • 3 Oranges
  • 60 g Sugar
  • 30 g Almond slivers
  • 7-10 Tbsp Lemon balm and orange spiral

Directions

    Bring milk to the boil in a pot and remove from the heat. Add custard powder and stir vigorously with a whisk for about 1 minute. Place the pudding in 4 small moulds rinsed with cold water and chill for about 4 hours.

    Meanwhile peel oranges so that the white skin is completely removed. Use a sharp knife to cut out the flesh between the parting skins. Squeeze the juice out of the parting skins and collect it.

    Fill up to 1/8 litre with some water and bring to the boil. Caramelise sugar in a pot until light brown. Add almonds and deglaze with the hot juice. Simmer for about 3 minutes while stirring. Leave to cool and add orange filets.

    Turn the pudding onto plates and spread the sauce with the orange fillets around it. Decorate with lemon balm and orange peel as desired.
