Flambéed pepper steak with homemade french fries

Ingredients

Servings: 4
  • 4 Beef steaks (approx. 180 g each)
  • 1 kg Potatoes
  • 1 l Frying oil
  • 4 TABLESPOONS crushed pepper
  • 7-10 Tbsp Salt
  • 20 g Butter
  • 2 TABLESPOONS Cognac
  • 100 g Whipped cream
  • 7-10 Tbsp Aluminium foil

Directions

    Take the steaks out of the fridge and let them rest. Peel and wash the potatoes and cut them into sticks. Dab dry with kitchen paper. Heat frying oil. Put potato sticks in portions in the hot oil and pre-fry in a narrow, tall pot for 5-6 minutes.

    Drain on kitchen paper.

    Put the pepper in a deep plate. Dab steaks dry, season with salt and brush with butter. Turn meat in the pepper. Fry steaks without fat in a hot pan for 2-4 minutes, turning.

    Add the cognac and flambé. Keep steaks warm in tin foil.

    Pour cream into the pan and loosen the frying set. Season with salt and keep warm. Add potato sticks again in portions to the frying oil for 3-4 minutes and bake until golden brown. Drain on kitchen paper and season with salt.

    Serve French fries with steaks and sauce.
