Ingredients

  • 300 g Celery
  • 1 Onion
  • 2 Garlic cloves
  • 3 TABLESPOONS Butter or margarine
  • 2 TABLESPOONS Flour
  • 300 ml dry white wine
  • 300 ml Vegetable broth (instant)
  • 200 g seedless grapes
  • 400 g Rocket salad
  • 4 (150 g each) Slices of pike-perch fillet without skin
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TEASPOONS Mustard
  • 4 TABLESPOONS Flour
  • 2 TABLESPOONS Sunflower oil
  • 1 TEASPOON dried tarragon
  • 7-10 Tbsp Grease
  • 7-10 Tbsp parchment paper

Directions

    Clean, wash and cut the celery into very fine slices. Peel onion and garlic and cut into fine cubes. Heat the fat in a saucepan. Add prepared vegetables and sweat for about 6 minutes. After 4 minutes dust with flour. Add wine and stock while stirring.

    Bring to the boil and simmer for about 2 minutes, stirring continuously. Pour into a greased casserole dish (2 1/2 litres capacity). Cut paper to the size of the dish, moisten and cover the dish with it. Cook in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for about 1 hour. Wash the grapes, pluck the grapes from the panicles and cut them in half. Clean, wash and cut lettuce into strips from the stalk. Wash fish, dab dry, season with salt and pepper and spread a thin layer of mustard on all sides. Turn in flour. Heat oil in a large pan. Fry the fish on each side for about 3 minutes. Remove the casserole dish from the oven 5 minutes before the end of cooking time. Remove the paper, place the lettuce and 3/4 of the grapes in the baking dish and fold in.

Sprinkle with the remaining grapes to serve
