Fish fillet in herb butter on zucchini and tomato vegetables

Ingredients

Servings: 4
  • 1 Onion
  • 2 TABLESPOONS Oil
  • 2 (approx. 400 g) Courgette
  • 400 g small tomatoes
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 600 g Fish fillet
  • 1-2 TABLESPOONS Lemon juice
  • 50 g Herb Butter
  • 7-10 Tbsp Herbs and lemon wedges

Directions

    Peel and chop the onion. Heat 1 tablespoon of oil. Sauté onion in it. Clean, wash and slice the zucchini, add to the onion and fry for about 5 minutes, turning

    Wash the tomatoes and cut them in half or quarters depending on size. Mix into the zucchini. Cover and steam for another 10 minutes. Season to taste with salt and pepper

    Wash the fish, pat dry and cut into pieces. With

    Sprinkle lemon juice and season. Heat 1 tablespoon of oil. Fry the fish fillets for 3-5 minutes on each side until golden brown

    Finally, heat the herb butter in the pan. Turn the fish in it. Arrange everything, sprinkle with the butter and garnish. Serve with farmhouse bread
