Line a baking tray with baking paper. Sprinkle 4 strips (approx. 12 x 4 cm) with the Parmesan cheese on the baking tray. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 6-8 minutes until golden brown.
Pull baking paper from the baking tray and place the strips with the baking paper over 2 wooden spoons so that the strips bend. If necessary, press them carefully into shape with your hands and let them cool down. Clean, peel and wash the fairy tails.
Halve the turnips and cut into thin slices. Clean, wash and quarter the radishes. Wash and clean the rocket and lettuce and pat dry well. Pluck the lettuce into bite-sized pieces. Whisk vinegar, salt, pepper and sugar.
Drop a thin stream of oil underneath. Mix the prepared ingredients with the vinaigrette, season again. Serve the parmesan strips with the salad.
