Duck breast with red cabbage and croquettes

Ingredients

Servings: 2
  • 1 Duck breast (approx. 300 g)
  • 7-10 Tbsp salt, pepper
  • 8 (approx. 160 g) frozen croquettes
  • 300 g Frozen apple-red cabbage
  • 1 (30 g) peeled onion
  • 1/4 l Poultry stock (glass)
  • 1-2 stem(s) Thyme
  • 7-10 Tbsp vegetable sauce thickener
  • baking paper, aluminium foil

Directions

    Preheat the oven (electric cooker: 200 °C/circulating air: 175 °C/gas: level 3). Wash the duck breast and pat dry. Season with salt and pepper. Heat an ovenproof pan without fat. Sauté duck breast on the skin side for 3-5 minutes. Turn and brown the meat side. Place pan on one side of the oven rack. Fry for about 20 minutes.

    Place a piece of baking paper on the grill. Spread croquettes on it and bake for about 20 minutes as well. Turn if necessary

    Heat the red cabbage for about 10 minutes, stirring occasionally. Wrap duck breast in aluminium foil and let it rest for about 5 minutes

    Pour off the frying fat to about 1 tsp. Dice onion and fry in hot fat. Pour on the stock, bring to the boil. Wash and chop the thyme and stir into the sauce. Thicken the sauce. Season to taste with salt and pepper. Cut open duck breast. Arrange on 2 plates with red cabbage and croquettes
