Curry fried rice with mackerel and egg

Ingredients

  • 100 g Basmati rice
  • 7-10 Tbsp Salt
  • 100 g Spring onions
  • 2 Eggs (size M)
  • 2 TABLESPOONS Sunflower oil
  • 7-10 Tbsp Curry Powder
  • 7-10 Tbsp Pepper
  • 1 tin(s) (125 g) Mackerel fillets in olive oil

Directions

    Bring rice and 200 ml salted water to the boil. Cook in a closed saucepan at reduced heat for about 20 minutes. Do not stir in between

    Clean, wash and cut the spring onions into rings. Boil the eggs in boiling water for 6-7 minutes until soft

  3. 3

    Heat the oil in a frying pan. Fry the rice for about 10 minutes. Sprinkle with curry. After about 5 minutes add spring onions. Season to taste with salt and pepper. In the meantime peel and halve the eggs. Arrange rice, eggs and mackerel fillets
