Curry fried rice with mackerel and egg

Ingredients

Servings: 2
  • 100 g Basmati rice
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 Eggs
  • 1 tin(s) (125 g) Mackerel fillets in olive oil
  • 1 collar Spring onions
  • 2 TABLESPOONS Oil
  • 1-2 TEASPOONS Curry

Directions

    Cook the rice in 200 ml boiling salted water according to the instructions on the packet. Boil eggs for 6-7 minutes until soft. Drain mackerel. Clean, wash and cut spring onions into rings

    Heat the oil in a wok or large frying pan. Sauté the curry briefly in it. Drain rice if necessary, add to the pan, mix well and fry for approx. 5 minutes. Fry the spring onions briefly. Quench the eggs, peel and halve them. Season fried rice with salt and pepper. Fold in mackerel and serve with eggs
