Curried fried rice

Ingredients

  • 400 g Basmati Rice
  • 7-10 Tbsp Salt
  • 50 g dried Mu-Err mushrooms (Asian mushrooms)
  • 1 collar Spring onions
  • 100 g Shiitake mushrooms
  • 1 (approx. 100 g) thick slice of cooked ham
  • 1 TABLESPOON + 1 tsp oil
  • 1 TABLESPOON Curry
  • 4 Eggs (size M)
  • 7-10 Tbsp white pepper

Directions

    Let the rice swell for about 20 minutes in just under 1 litre of boiling salted water. In the meantime soak the Mu-Err mushrooms in warm water for about 15 minutes. Clean, wash and chop the spring onions.

    Clean and halve the shiitake mushrooms. Cut ham into fine strips. Drain Mu-Err mushrooms and chop finely.Heat 1 tablespoon of oil in a wok or large frying pan. Sauté spring onions, mushrooms and ham.

    Sprinkle with curry and sauté briefly. Add rice and stir-fry for 5-6 minutes. Heat 1 teaspoon of oil in a coated pan. Fry the eggs to a fried egg. Turn the eggs once and fry until golden brown.

    Season eggs with salt and pepper. Season curried fried rice with salt and pepper and serve with fried eggs.
