Crispy turkey in cream sauce

Ingredients

  • 1 baby turkey ready for frying (approx. 3.5 kg)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp a little + 1 tablespoon of oil
  • 1 bunch/pot of thyme
  • 5 Onions
  • 14 Bread roll (from the previous day; approx. 700 g)
  • 1 bunch of parsley
  • 5 Eggs (Gr. L)
  • 1⁄2 l Milk
  • 5 Carrots
  • 1 Leek (leek; approx. 300 g)
  • 2 Cinnamon sticks
  • 6 Cloves
  • 3 Star Anise
  • 500 g Whipped cream
  • 8 small apples (about 125 g each)
  • 4 TABLESPOONS Maple syrup
  • 7-10 Tbsp wooden skewers
  • 7-10 Tbsp Kitchen yarn

Directions

    Wash the turkey inside and out, dab dry and rub with salt and pepper. Wash the thyme and put half of it into the turkey. Close the opening with a wooden skewer, tie up with kitchen string. Tie up wings.

    Place the turkey on an oiled fat pan. Roast in the preheated oven (electric cooker: 150 °C/circulating air: 125 °C/gas: stage 1) for approx. 3 1⁄2 hours, gradually adding 1⁄2-3⁄4 l water.

    Peel and finely dice 1 onion and sauté in 1 tablespoon of hot oil. Also dice the rolls. Wash parsley, chop finely and put 1 tablespoon aside, covered. Put the rest in a bowl with the eggs, diced onions and rolls.

    Warm the milk lukewarm and pour over it. Season with salt and pepper. Mix everything. Cover and let it rest for about 1 hour.

    Peel or clean, wash and cut carrots and leeks into thick slices. Cut 4 onions into slices. Mix everything with the rest of thyme, cinnamon, cloves and star anise. Season with salt and pepper.

    After 3 1⁄2 hours roasting time, spread around the turkey. Turn up the oven (electric cooker: 175 °C/circulating air: 150 °C/gas: level 2) and continue roasting for approx. 1 hour. Add cream approx. 45 minutes before the end of the roasting time.

    Wash the apples and add them to the vegetables about 30 minutes before the end of the frying time. Spread the turkey with maple syrup about 15 minutes before the end of the roasting time.

    Form approx. 16 dumplings from the dumpling mixture. Moisten your hands, because the dough sticks a bit. Cook the dumplings in plenty of boiling salted water for 15-20 minutes.

    Take out the turkey and carve it. Season vegetables and cream sauce to taste. Drain the dumplings. Arrange everything. Sprinkle with remaining parsley. Red cabbage tastes good with it.
