Classic white cabbage salad

Ingredients

  • 1 small head white cabbage (about 1,2 kg)
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp Salt
  • 7-8 TABLESPOONS White wine vinegar
  • 1 Onion
  • 3 TABLESPOONS Oil
  • 1 TABLESPOON Caraway seeds
  • 7-10 Tbsp Pepper

Directions

    Clean, wash and quarter the cabbage and slice it finely from the stalk. Pour into a large bowl. Sprinkle with 1 tsp. sugar and 1 tsp. salt, sprinkle with 2-3 tbsp. vinegar and knead well with your hands. Leave to stand for about 30 minutes.

    Peel and finely chop the onion. Whip the oil drop by drop under 5 tbsp vinegar. Sprinkle cabbage with caraway and onion. Pour the vinegar-oil mixture over it, mix well and let it stand for another 2 hours.

    Season to taste with salt, pepper and sugar. Arrange in a bowl.
