Bring milk, salt, 15 g sugar and a teaspoon of cinnamon to the boil. Add the noodles and cook for about 12 minutes. In the meantime, pour the plums onto a sieve, bring the juice to the boil in a pot, except for 4 tablespoons. Mix the remaining juice, remaining sugar and starch, stir into the juice and bring to the boil again briefly. Stir plums into the thickened juice. Pour the noodles onto a sieve, let them cool down briefly and form nests. Arrange noodles and plum compote on the dessert plates and sprinkle with the remaining cinnamon
