Cook rice in boiling salted water according to package instructions. Clean and trim the mushrooms. Depending on size, cut in half if necessary. Clean and wash the leek and cut into wide rings. Heat the oil in a large pan.
Fry the minced meat in it until coarsely crumbly. Add the mushrooms and leek and fry for 2-3 minutes while turning. Add cream and 200 ml water and simmer for 1 minute. Season to taste with lemon juice, salt, paprika and pepper.
Drain the rice, allow to drain and fold in. Serve garnished with lemon slices and parsley.
