Ingredients

  • 50 g Candied orange peel
  • 50 g Dark chocolate
  • 200 g Flour
  • 2 yesterday tbsp. cocoa powder
  • 80 g Icing sugar
  • 130 g cold butter
  • 7-10 Tbsp grated peel of 1/2 untreated orange
  • 1 Egg yolk (size M)
  • 300 g white couverture
  • 4 TABLESPOONS Irish whiskey cream liqueur (e.g. Baileys)
  • 3 TABLESPOONS Whipped cream
  • 7-10 Tbsp little golden love beads
  • 7-10 Tbsp Flour
  • baking paper
  • 1 Freezer bag

Directions

    Chop the candied orange peel very finely in the universal chopper. Grate the chocolate. Knead flour, cocoa, icing sugar, butter in flakes, orange peel, candied orange peel, chocolate and egg yolk to a smooth dough. Chill for 30 minutes. Cut the chocolate coating into pieces.

    Put it in a pot with liqueur and cream and warm it up while stirring until the chocolate coating has melted. Put it in a cold place. Roll out the dough 3 mm thin on a floured work surface. Cut out about 50 fir trees (8 cm high) and place them on 3 baking trays covered with baking paper. Bake the trays one after the other in the preheated oven (electric cooker: 175 °C on medium rack/ convection oven: 150 °C/ gas: level 2) for approx. 12 minutes. Let them cool down on a cake rack. Mix the chocolate cream with the whisk of the hand mixer. Put half of the mixture into a small freezer bag. Cut off a small corner.
