Chicory cocktail with shrimps

Ingredients

Servings: 4
  • 1 can(s) (425 ml) Mango
  • 150-200 g Shrimps (deep sea crab meat)
  • 150 g Fresh cream
  • 125 g Salad cream
  • 7-10 Tbsp curry, salt, pepper, sugar
  • 1 small radicchio salad
  • 2-3 Spring onions
  • 3 Chicory (ca. 150 g)

Directions

    Drain the mango, collect the juice. Puree half the mango. Cut the rest into slices

    Shrimp rinse, drain. Mix crème fraîche, salad cream and 4-5 tablespoons mango juice. Fold in pureed mango. Season to taste with curry, salt, pepper and a little sugar

    Clean and wash the radicchio, spring onions and chicory. Put some chicory leaves aside. Cut radicchio into strips, spring onions into rings and chicory into strips

    Line a bowl with chicory leaves. Mix radicchio, spring onions, mango, chicory strips and shrimps. Pour into the bowl
