Chicken chili with white beans

Ingredients

Servings: 6
  • 200 g dried white beans
  • 1 (approx. 1.2 kg) organic chicken ready to cook
  • 1 collar Soup Greens
  • 3 Bay leaves
  • 7-10 Tbsp salt, pepper, sugar
  • 2 large onions
  • 3 Garlic cloves
  • 3 TABLESPOONS Olive oil
  • 2 TEASPOONS Sweet peppers
  • 2 TEASPOONS ground cumin
  • 1⁄2 Tsp ground Chipotle chilli powder (smoked)
  • 400 g cherry tomatoes
  • 50 g Parmesan (piece)
  • 1⁄2 Federation flat leaf parsley

Directions

    Rinse beans in a sieve the day before. Put them in a large bowl, cover well with cold water and soak overnight.

    The day before, wash the chicken thoroughly inside and out and place it in a large pot. Clean or peel the soup greens, wash and cut into large pieces. Add bay leaf to the chicken and pour approx. 2 1⁄2 l of cold water on it, so that the chicken is covered.

    1 1⁄2 Add a teaspoon of salt, bring to the boil, cover and cook over medium heat for about 1 1⁄2 hours. Repeatedly skim off the resulting foam with a skimmer. Then lift the chicken out of the broth and let it cool down.

    Pour the broth through a fine sieve, also allow to cool.

    The next day, drain the beans. Remove cold solid fat from the broth. Peel onions and garlic and chop finely. Heat the oil in a large pot. Fry the onions and garlic over medium heat for 6-8 minutes until golden brown.

    Sprinkle spices over it and steam briefly. Add beans and stock, bring to the boil. Cover and simmer for about 1 hour.

    In the meantime, remove the skin from the chicken. Remove the meat from the bones and pluck it into small pieces. Wash and halve the tomatoes. Add the meat and tomatoes to the soup about 15 minutes before the end of the cooking time.

    Coarsely grate the parmesan. Wash parsley, shake dry, pluck the leaves and chop finely. Season soup with salt, pepper, 1 pinch of sugar and possibly more chilli powder. Sprinkle with parsley and parmesan.
