Ingredients

  • 250 g Sweet cherries
  • 3 Eggs (size M)
  • 60 g Diabetic sweetness
  • 1 pinch Salt
  • 250 g Low-fat curd
  • 250 g Sour cream or crème fraîche
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 1 package Pudding powder "Vanilla Flavor"
  • 30 g Durum wheat semolina
  • 200 g Whipped cream
  • 90 g Cherry Jam
  • 7-10 Tbsp Melissa
  • 7-10 Tbsp Grease

Directions

    Put 12 cherries aside for decoration. Wash and stone the remaining cherries. Separate eggs. Beat egg whites until stiff. Mix egg yolk, diabetic sweetener and salt briefly. Mix with quark, sour cream and lemon peel. Stir in pudding powder and semolina. Fold in the egg white. Grease muffin tray with 12 troughs well and fill in the dough. Spread pitted cherries on top. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 40-45 minutes. Remove and let cool on a cake rack. Whip the cream until stiff. Pour cream as a blob on the muffins and decorate with the remaining cherries, jam and lemon balm

    You can exchange these ingredients:

    Prepare the quark mixture with 75 g sugar and 1 packet of vanillin sugar instead of diabetic sweetness. You can replace the diabetic jam with 100 g cherry jam
