Peel and wash the potatoes and cut into large cubes. Clean, wash and possibly chop the mushrooms. Leek also clean, wash and cut into pieces. Fry bacon in hot oil until crispy and remove.
Fry the potatoes in the frying fat for about 10 minutes, turning until golden brown. Add leek and mushrooms and cook for another 10 minutes. Whisk eggs. Season with salt and pepper. Pour over the vegetables and let them falter at a mild heat.
Push together at intervals with the spatula. Wash parsley, dab dry, chop and sprinkle over the farmer's breakfast.
