Caramelized pepper salad with basil and parmesan shavings

Ingredients

Servings: 4
  • 1 medium green, red and yellow peppers
  • 1 Onion
  • 1 Garlic clove
  • 1/2 bunch Basil
  • 5 TABLESPOONS Olive oil
  • 1 Bay leaf
  • 1/2-1 TEASPOON Sugar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1-2 TABLESPOONS Balsamic vinegar
  • 30 g Parmesan cheese

Directions

    Halve the peppers, clean, wash and cut into strips. Peel onion and garlic and chop finely. Wash basil, shake dry and chop half of the leaves roughly

    Heat 3 tablespoons of oil in a frying pan, stir-fry the pepper strips for about 5 minutes. Add onion, garlic and bay leaf. Sprinkle with sugar and season with salt and pepper. Simmer for about 20 minutes at low temperature until the sugar is caramelised. Drizzle with a little vinegar, add chopped basil, place in a bowl and let cool

    Parmesan cheese in shavings. Season the peppers with salt and pepper again, then arrange in bowls. Sprinkle with cheese and sprinkle with the remaining olive oil. Garnish with basil leaves before serving. Bread tastes good with it
