Caramelized noodle salad

Ingredients

  • 500 g Pasta (e.g. Penne mezzane)
  • 7-10 Tbsp Salt
  • 250 g Shallots
  • 2 Garlic cloves
  • 500 g small mushrooms
  • 2-3 TABLESPOONS Olive oil
  • 7-10 Tbsp Pepper
  • 4-5 Tbsp Sugar
  • 100 ml Balsamic vinegar
  • 1 TEASPOON dried rosemary
  • 400 g cherry tomatoes
  • 1 Pot of basil
  • 100 g black olives
  • 75-100 g Parmesan cheese in one piece

Directions

    Prepare the pasta in boiling salted water according to the instructions on the packet. Drain and allow to cool. Peel and halve the shallots. Peel garlic and chop finely. Clean the mushrooms, clean them. Heat oil.

    Fry the mushrooms, shallots and garlic for 2-3 minutes while turning. Season with salt and pepper. Take them out. Melt the sugar in the pan until golden brown. Deglaze with vinegar and 200 ml water while stirring. Add mushrooms, shallots, garlic and rosemary and simmer for about 10 minutes. Wash the tomatoes and cook for the last 5 minutes. Mix everything hot into the noodles. Wash and pluck the basil and cut into strips. Fold in with the olives. Season with salt and pepper. Let it stand for about 1 hour.
