Halve the pears and cut out the core. Peel the pears.
Caramelise the sugar until golden brown. Add the pears and turn briefly in the caramel. Add lemon juice and maple syrup and boil the caramel until it is free. Cook the pears in the caramel for approx. 5 minutes, turning.
Chop and roast the walnuts and mix them with the cranberries. Arrange the pear halves with the caramel syrup and sprinkle with the walnut-cranberry mixture. Serve garnished with mint.
