Caramel Pears

Ingredients

Servings: 8
  • 8 small pears
  • 400 g Sugar
  • 1 TEASPOON White wine vinegar
  • 4 TABLESPOONS light syrup
  • 8 wooden sticks
  • baking paper

Directions

    Wash pears hot and rub dry. Replace stalks with wooden stalks (lollipop stalks). Heat 100 ml water and sugar in a heavy pot while stirring until the sugar is completely dissolved. Add vinegar and syrup. Bring to the boil, cover and cook for about 1 minute so that the sugar crystals on the inside of the pot dissolve and the caramel mass does not crystallise

    Remove the lid from the pot and place the sugar thermometer in the pot. Heat the caramel further until the thermometer reads 140° C. Remove the pot from the stove and immediately place it in a cold water bath. Grasp pears one after the other by their stems and quickly cover them with the caramel until they are well coated. Drain excess caramel into the pot. Place the pears on a baking tray lined with baking paper. If necessary, reheat caramel for remaining pears. Let the caramel harden on the pears
