Cannelloni with sausage meat in tomato-curry sauce

Ingredients

Servings: 6
  • 2 Onions
  • 2–3 Garlic cloves
  • 3-4 Tbsp Olive oil
  • 1 1/2 TSP. Curry
  • 1/2 TEASPOON Sugar
  • 1 1/2 TABLESPOONS Tomato paste
  • 1 can(s) (850 ml) Tomatoes
  • 400 ml Vegetable broth
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 red chillies
  • 8 coarse uncooked bratwursts (à approx. 150 g)
  • 1 1/2 TABLESPOONS dried Italian herbs
  • 1 package (250 g) Cannelloni (made from 100 % durum wheat semolina)
  • 50 g medieval Gouda cheese and Cheddar cheese
  • 7-10 Tbsp Disposable piping bag

Directions

    Peel and finely dice the onions. Peel garlic and chop very finely. Heat oil in a pot, fry onions and garlic until transparent. Sprinkle with curry and sugar, sweat, add tomato paste and stir in. Deglaze with tomatoes and stock, bring to the boil. Season with salt and pepper. Simmer for 12-15 minutes in an open pot, stirring several times

    Clean and wash the chillies and cut them into fine rings. Press the sausage meat mixture from the intestines into a mixing bowl. Knead in chilli and herbs. Fill three portions of the meat mixture into a piping bag. Cut off the tip. Press sausage meat from both sides into the cannelloni

    Grate cheese finely and mix. Put the cannelloni in an ovenproof dish and pour the sauce over it. Sprinkle with cheese and bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 40 minutes. Remove from the oven and serve
