Buttermilk yeast waffles with plum compote

Ingredients

Servings: 16
  • 500 g Plums
  • 400 ml Cherry nectar
  • 1 Cinnamon stick
  • 2 TEASPOONS Cornstarch
  • 500 ml Buttermilk
  • 1/2 cube (approx. 20 g) Yeast
  • 1 TEASPOON + 50 g sugar
  • 75 g Butter
  • 4 Eggs (size M)
  • 1 pinch Salt
  • 375 g Flour
  • 7-10 Tbsp Cinnamon sugar
  • 7-10 Tbsp Grease

Directions

    Plums wash, stone. Boil up cherry nectar to 4 tablespoons and cinnamon stick. Add plums and simmer for about 5 minutes. Stir the remaining cherry nectar and starch until smooth. Slowly stir into the cherry nectar.

    Bring to the boil again and simmer for about 2 minutes. Let the compote cool down, then put it in a cool place. Warm buttermilk lukewarm. Crumble the yeast and stir into the milk with 1 teaspoon sugar and let it rise for about 15 minutes.

    Melt the butter. Mix eggs, 50 g sugar and salt with the whisk of the hand mixer. Add flour and buttermilk alternately and mix. Stir in butter. Cover the dough and let it rise for about 30 minutes.

    Preheat the waffle iron and lightly grease it. Bake about 16 waffles one after the other from the dough. Arrange the waffles with plum compote and sprinkle with cinnamon sugar.
