Melt 50 g butter. Mix eggs, add melted fat and buttermilk. Mix flour, baking powder, salt and sugar and stir into the egg-buttermilk mixture. Fry 12 small pancakes in a little hot clarified butter.
Drain on kitchen paper and keep warm. Form 4 small balls from remaining butter. Arrange 3 pancakes each with a butter ball on plates. Add maple syrup and garnish with lemon balm.
