Melt 2 tablespoons of fat. Mix flour, baking powder, sugar and salt. Whisk the egg with a whisk. Stir in buttermilk and liquid fat. Gradually stir in the flour mixture by the spoonful.
Heat 1 tablespoon of fat in a coated pan and fry 1/6 of the dough at medium heat for about 3 minutes on each side until golden brown. Bake the rest of the dough in the same way. Meanwhile, fry the bacon in portions in a pan without fat until crisp.
Arrange pancakes and bacon on a plate. Maple syrup tastes good with it.
