Bulgur salad with peppers, parsley in lime-chives vinaigrette

Ingredients

  • 1 small onion
  • 200 g Tomato sauce
  • 75 g Bulgur (coarse wheat groats)
  • 7-10 Tbsp one 1/2 yellow and one orange pepper
  • some stem(s) Parsley
  • 7-10 Tbsp a few stalks of chives
  • 7-10 Tbsp Juice of 1 lime
  • 1 TEASPOON Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 1 pinch Sugar
  • 7-10 Tbsp Lime wedges

Directions

    Peel and finely chop the onion. Put sauce and 200 ml water in a pot and bring to the boil. Add onion and bulgur. Cover and cook for about 15 minutes. Stir from time to time.

    Let it cool down. Clean, wash and chop the peppers. Wash parsley, dab dry and chop finely. Mix paprika and parsley with the bulgur. Wash chives, dab dry, put some aside for garnishing, cut the rest into rings. Whisk lime juice, oil and chives. Season with salt, pepper and sugar. Mix Bulgur with the vinaigrette. Flavour again.
