Braised roast beef on tomato beans and vegetables (recipe variant pressure cooker)

Ingredients

  • 1.6 kg Beef for braising (e.g. semer roll or false fillet)
  • 200 g Onions
  • 30 g clarified butter
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 500 ml clear consommé
  • 300 g frozen broad beans
  • 1.5 kg waxy potatoes
  • 4 Garlic cloves
  • 6 TABLESPOONS Olive oil
  • 500 g Cutting beans
  • 2 (approx. 500 g) Meat Tomatoes
  • 1 pot or approx. 1/2 bunch coriander
  • baking paper

Directions

    Wash the beef and dab dry. Peel onions and dice them coarsely. Heat clarified butter in a large pressure cooker with traffic light function. Fry the meat all around, turning it over.

    Add the onions and fry briefly. Season meat with salt and pepper, deglaze with broth. Close pressure cooker according to instructions. Set the cooking indicator with traffic light function to level II (fast setting) and heat the pot with full cooker power (bring to the boil).

    If the yellow ring is visible, reduce the energy supply. As soon as the green ring appears, the first cooking time of approx. 40 minutes begins. Defrost the broad beans. Peel and wash the potatoes and cut them into thin slices.

    Peel and crush garlic cloves. Mix potatoes, garlic and olive oil. Season with salt and pepper. Spread on a baking tray lined with baking paper and bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 30-40 minutes until brown.

    Wash, clean and cut the beans into pieces. Wash, clean and roughly dice the tomatoes. From the coriander, except for something to garnish, pluck off the leaves. Mix tomatoes, beans and coriander, season with a little salt and pepper.

    Evaporate and open the pressure cooker according to the instructions. Spread the bean mixture around the meat. Close the pressure cooker according to the instructions. Set the cooking indicator with traffic light function to level I (gentle setting) and heat the pot with 2/3 of the cooker's power (initial boiling).

    If the yellow ring is visible, reduce the energy supply. As soon as the green ring appears, the cooking time of approx. 15 minutes begins. Evaporate and open the pressure cooker according to the instructions. Remove the roast beef, cut it into slices and arrange it on a deep plate with tomato and bean vegetables and the braising stock.

    Sprinkle with fresh coriander leaves. Add the potato wedges.
