Braised pork steak with caramelized apples

Ingredients

Servings: 4
  • 1 Onion
  • 300 g Carrots
  • 2 Leek sticks (leek)
  • 2 can(s) (425 ml each) white beans
  • 4 ripped pork chops
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Sunflower oil
  • 600 ml Vegetable broth
  • 300 ml apple juice
  • 1/2 Pot of sage
  • 2 Apples
  • 25 g Butter
  • 25 g Muscovado sugar

Directions

    Peel and roughly dice the onion. Peel and slice the carrots. Clean the leek, cut into rings and wash thoroughly. Pour beans into a sieve and rinse briefly

    Wash the steaks, dab dry and season with salt and pepper. Heat the oil in a roasting pan and fry the steaks for approx. 5 minutes, turning them over, take them out and sauté the onion in the cooking fat for approx. 5 minutes. Deglaze with stock and apple juice

    Put meat, carrots and leek into the roaster, bring to the boil and braise for about 1 hour. Wash the sage, shake dry, pluck leaves from the stems and chop finely, except for a little garnish

    Add the beans and sage and cook for 1 more hour. In the meantime wash apples, cut out the core with an apple corer. Cut apples into slices of about 1 cm thickness. Heat butter in a pan. Fry sage leaves in it briefly, take them out and let them drip off on kitchen paper. Fry the apple slices in the pan in portions for about 2 minutes each. Remove, melt sugar in the pan and caramelise apple slices for another 2 minutes each. Arrange braised meat and apple slices
