Boiled fillet of beef with mashed potatoes

Ingredients

  • 1 kg Tafelspitz (beef from the rump)
  • 2 Onions
  • 1 collar Soup Greens
  • 1 Bay leaf
  • 2-3 Cloves
  • 7-10 Tbsp Salt
  • 1 TEASPOON Peppercorns
  • 1 kg Potatoes
  • 2 Apples
  • 1 piece(s) (approx. 20 g) Horseradish
  • 1 TABLESPOON Lemon juice
  • 7-10 Tbsp Pepper
  • 1 TABLESPOON Sugar
  • 100 g Whipped cream
  • 3 TABLESPOONS Oil

Directions

    Wash the meat and let it drip off. Peel and halve 1 onion and fry it in a pan without fat for about 5 minutes on the cut surface until dark. Clean and wash the soup greens. Cut carrots and celery into 2-3 pieces. Cut the rest of the vegetables roughly into pieces. Bring 1 1/2 - 2 litres of water, bay leaf, cloves some salt, onion, peppercorns and soup greens to the boil in a large pot. Add meat and simmer at medium heat for about 2 hours.

    In between, skim off the resulting foam with a skimmer. After 20 minutes take out celery and carrots and cut into small cubes. Wash the potatoes and cook in boiling water for about 20 minutes. For the apple horseradish, peel 1 apple and grate it finely, except for the core. Peel and finely grate the horseradish. Season to taste with lemon, salt, pepper and sugar. Whip the cream until creamy and fold in the apple-horseradish. Keep apple horseradish cold until serving. Drain potatoes, rinse, peel and slice. Heat the oil in a large pan and fry the potatoes for about 15 minutes while turning. Peel the remaining onion and cut into strips. 5 minutes before frying onion add to potatoes and fry. Season to taste with salt and pepper. Remove the finished boiled beef from the stock and keep warm.

    Whip the cream until creamy and fold in the apple-horseradish. Keep apple horseradish cold until serving. Drain potatoes, rinse, peel and slice. Heat the oil in a large pan and fry the potatoes for about 15 minutes while turning. Peel the remaining onion and cut into strips. 5 minutes before frying onion add to potatoes and fry. Season to taste with salt and pepper. Remove the finished boiled beef from the stock and keep warm. Pour approx. 400 ml stock through a sieve into a pot and warm it up. Wash the rest of the apple, cut into slices and leave to stand in the stock for approx. 3 minutes. Add vegetable cubes to warm up. Remove apple slices and vegetables. Cut the boiled beef into thin slices and arrange on plates with potato pancake, some stock, apple horseradish and diced vegetables. Serve garnished with apple slices

    Pour approx. 400 ml stock through a sieve into a pot and warm it up. Wash the rest of the apple, cut into slices and leave to stand in the stock for approx. 3 minutes. Add vegetable cubes to warm up. Remove apple slices and vegetables. Cut the boiled beef into thin slices and arrange on plates with potato pancake, some stock, apple horseradish and diced vegetables. Serve garnished with apple slices
